I love hummus!

I know that every time I started a new post I write about how much I love this or that dish, I wanted to stop but I cannot!!! I love too much (almost) every possible food on Earth and in particular…I love hummus!!! I hope there is someone out there that is hummus-addicted like me and so can understand my feelings!!! If instead you don’t even know what hummus is, don’t worry: it’s so easy to make and so good that you will be soon addicted to this wonderful chickpeas sauce typical of Middle East countries! So with just a box of chickpeas you could travel in fascinating places like…Jerusalem! Cheap, isn’t it?

I’ve never been there but this is a trip on my (almost infinite) wish list of places I want to see asap…because I think Jerusalem is a really fascinating city full of history and culture: you know it’s the holy city of three religions and so it has to be special!!! If someone of you have been there please tell me something about it!!!I think  also that is its multiculturality that makes it so wonderful… and if there is something in which you can litteraly have a taste of  multiculturality, indipendently of physical barriers, this is good food! So follow me in this trip, I hope you enjoy;)

Hummus

chickpeas (200 g of dry chickpeas, 400 g of cooked chickpeas);

6 spoons of tahina;

2 lemons (juice);

2 garlic tooth ( the quantity depends also on your taste);

olive oil;

salt;

parsley and paprika.

If you want to use dry chickpeas just put them into a pot of water for one night and then cook them in boiling water (it takes so much time but of course the final result will be better!). Then using a mixer whip cooked chickpeas, lemon juice, garlic, oil, salt and tahina. Tahina is a typical sauce made with sesame seeds and if you don’t find it you can obtain a really good peacocks sauce instead, don’t worry! You can eat this creamy sauce together with pitot* (a typical bread), babganoush, a sauce made in the same way as hummus but with aubergines instead of chickpeas and grilled vegetables…so yummy!!!

*To made some pitot (singular, pita) you have just to prepare with 450 g of flour, 7 g of fresh yeast, 1 tea spoon of salt, 1/2 tea spoon of sugar, 1/2 Table spoon of olive oil and water a dough similar to the normal bread dough! Then after one hour you have to divide in 8/10 small balls your daugh and extend every one of this ball until you have a really thin disc from every ball! You can cook it in the oven at 250° for some minutes: you will have a sort of pocket of bread in which you can put wathever you like! Enjoy;)
